Mahleb
Mahleb (also spelled mahlab, mahalab, mahleb, mahaleb, mahlep, or mahalep - whew!) is a spice from the sour, black St Lucie Cherry predominantly found in the Mediterranean & Middle East. This unique spice comes from within the kernel of the cherry stone and has a completely unique flavor; a little sour, very floral- with hints of almond and notes of cherry and roses.
Ruby Chocolate
Ruby chocolate is a new chocolate variety made from ruby cocoa beans. These beans have a natural red/ pink colour. The chocolate is characterized by a slightly sweet & sour berry flavoring which is mildly acidic. Ruby chocolateโs cocoa solid percentage sits it between white and milk chocolate; around 42%. This new variety of chocolate was introduced to the culinary world in 2017 by Barry Callebaut; a Belgian- Swiss cocoa company.
